Brussel Sprouts Bhaji

Serves: 7 Bhaji fritters
Vegan!

Ingredients
2 cups Shaved Brussel sprouts
3/4 cup Chickpea flour
1/2 teaspoon Turmeric
1/2 teaspoon Garam masala
1/2 teaspoon Chili powder
1/2 teaspoon Fenugreek leaves
1/2 teaspoon Baking powder
1/4 teaspoon Salt
1/3 cup Water
1 teaspoon Maple syrup
2 cups Oil for frying
FOR THE MINT "YOGURT" SAUCE:
1 cup Non-dairy yogurt
1/4 cup Fresh mint
1/4 teaspoon Salt
1/4 teaspoon Maple syrup
1/2 teaspoon Ground coriander

Step by Step Instructions
  1. Bring a pot of water to a boil. Blanch the shaved Brussels sprouts for 3 minutes, then drain the water and set them aside.
  2. Combine the chickpea flour, spices, baking powder,and salt in a mixing bowl. Add the water, maple syrup and mix until a well-combined batter is formed. Stir the shaved Brussels sprouts into the batter
  3. Form the batter into 6 or 7 balls, then place them onto a plate lined with parchment paper. Heat the oil in a medium-sized pot and carefully drop the balls into it one at a time.
  4. Fry the balls for about 3 minutes, turning periodically to ensure an even cooking. Serve immediately after cooking alongside the mint "yogurt" sauce.
  5. To prepare the mint "yogurt" sauce, combine all of the ingredients in the sauce section in a blender and blend until smooth.
