Sweet Chow Chow Pickles

Serves: approx. 7 1 litre jars
Vegan!
Ingredients
18 cups
sliced pickling cucumbers -thinly
1/3 cup
pickling salt
4
Medium sized onions
1
green pepper
1
sweet red pepper
3 cups
vinegar
4.5 cups
Sugar
1 TBSP
Mustard Seed
1 tsp
Celery Seed
1 tsp
Turmeric
Step by Step Instructions
- Put all the sliced cucumbers in a large bowl, sprinkle with the pickling salt & let sit over night on the counter.
- The next day.... drain the water down the sink. Put all the above ingredients in a lrg pot, and add the cucumbers. Bring to a boil, then simmer for approx. 1.5 hrs. and put into hot sterilized canning jars.
- Note: There is no water in this recipe
