Kale-Slaw with Hemp Cashew Dressing

Ingredients
3 cups
thinly sliced kale
3 cups
finely shredded cabbage
3/4 cup
cashews -soaked for two hours or more
2 pitted
dates
2 T
dijon mustard
1 T
lemon juice
2 1/2 T
apple cider vinegar
1/4 t.
sea salt
Step by Step Instructions
- 1. Blend the drained cashews, hemp seeds, water, lemon juice,vinegar, sea salt,dates,and mustard in a blender till totally smooth. 2. Pour about 1/3 cup of the dressing over the kale and cabbage. stir well. Add more dressing as needed until the slaw is creamy and evenly coated. Save remaining dressing for salads, wraps, and for veggie dipping. Serve!
